Sweet potatoes are high in vitamins as A, B5, B6 and have many more important nutritious and health benefits. So this makes them great healthy food for you children. Follow this easy and nutritious recipe, it is tasty and everyone will love it.
Needed ingredients for 12 servings :
4 large sweet potatoes,
peeled and quartered
²⁄³cup whole milk
2 teaspoons ground cinnamon, divided
½ teaspoon ground nutmeg
1 cup rolled oats
¼ cup pure maple syrup
STEP 1. Oven needs to be preheated to 400°F. Spray the bottom of a 9″ Ч 9″ casserole dish with nonstick cooking spray.
STEP 2. Place the potatoes in the prepared dish, cover, and bake until fork-tender, about 40 minutes.
STEP 3. Mash the potatoes with the milk, 1 teaspoon cinnamon, and nutmeg in the casserole dish. Smooth into an even layer with the back of a spoon.
STEP 4. In a small bowl, toss the remaining cinnamon with the oats. Stir in the maple syrup. Spread evenly over the potatoes.
STEP 5. Bake on the top oven rack for an additional 30 minutes, or until the topping appears brown and crispy.
